    Carrot Bread 2

    Recently I mentioned on my Facebook page that I'd made carrot bread and wow, was I surprised with the responses. Lots of people wanted this recipe. Food is something I mention alot, as it's always being prepared in some shape or form for my family, and I'm glad to share these tried and true dishes with everyone.

    Carrot Bread


    -1 cup finely shredded carrots
    -3 eggs
    -1 tsp baking soda
    -2 tsps cinnamon
    -1 1/2 c brown sugar, firmly packed
    -2 tsps baking powder
    -1/2 tsp salt
    -1 1/2 cup all-purpose flour
    -1 cup vegetable oil

    Sift dry ingredients into a mixing bowl, while in a separate bowl, whisk together the oil, sugar & eggs. Stir the liquid mixture into the flour mixture and mix well. Add your shredded carrots and fold in gently. Grease & flour one 9 x 5 inch loaf pan, pour in your mixture, and bake at 350 degrees for about 40 minutes

    Sometimes people will add a cup of applesauce to make the bread extra moist, but I didn't feel it was necessary (though I may do it next time just to see the difference). Also, if you want, you could also add chopped walnuts. They'd be a great compliment to the carrots and the bread mixture.

    Breads like these are perfect as easy, light snacks. Even children love them.


    The wee one has eaten a warmed up slice with extra fruit for his morning meal. It's a great way to incorporate healthy foods into a simple dish (which can be ideal for picky eaters, which y'all know the wee one most definitely isn't). Sometimes I'll rustle up a spread to go with these breads, but really, it doesn't even need it. It's delicious as is.

    Another great thing about these simple bread recipes? You can switch out the core ingredient-such as carrots in this particular one-and replace it with another, like zucchini.
