    Did y'all know that the 12th of April is National Grilled Cheese Day?

    Around here we call it Eldest's birthday, but in lieu of the grilled cheese being her favorite sandwich, she's pleased as punch to share the day. By the by, thank you to everyone who stopped by to wish my sweet girl a happy birthday! Y'all are so kind to share in our joy!

    It's currently the 13th in Tokyo, and as it's Lent we usually reserve grilled cheeses for Friday nights. But today we're shaking things up a bit!

    Wild, I know. I'm totally out of control.

    It's still pretty chilly here, and Eldest will be getting home late from soccer practice. What better way to wind down and warm up than with a melty grilled cheese and creamy tomato soup? And why stop there with the madness?

    Why serve the traditional? It's tried and true; a definite classic. But as a classic due to its simplistic design, slight variations can keep this sandwich favorite from becoming boring.

    I think we'll take the extra step and use different ingredients. A sharper cheese, a buttery green, maybe an onion sauteed in balsamic vinegar.

    We'll make the classic as it should be honored for it's timeless perfection. But if you, like us, are interested in dressing up your grilled cheese, here are a few different variations designed to please any palate.

    WOw, these all look amazing, we have quite a few grilled cheeses per week as you can imagine with a 4 yr old. thanks for the variations, I'll be sure to switch it up now!! and happy birthday eldest!!!!!

    I am a HUGE fan of grilled cheese! I like to fry up some bacon, then I put the bacon in the grilled cheese sandwich, and grill it in the bacon fat.

    Not often, or anything... But as a bacon and grilled cheese treat, from time to time, it is my all time favorite method.
